15 Minute Weeknight Dinner: Quinoa Stir-Fry Recipe

When it comes to fast and easy dinner recipes, I’m the first to admit that I will take shortcuts all day long. I love cooking tasty and healthy meals, but I really don’t want to spend my whole night in the kitchen… Am I alone here? I didn’t think so.

Now since I also love couponing, I have a good-sized stockpile of frozen veggies (there was a great deal on Birds Eye veggies a while back that made them free, but whew, that’s a story for another day!) Anyways, I now have a freezer full of frozen veggies, and my family loves chicken so, I came up with a fast, easy and amazingly healthy dinner that we have at least once a week now!

I think you guys are going to love it, so I wanted to share the super easy recipe.

15 minute quinoa stir-fry recipe

15 Minute Quinoa Stir-Fry Recipe

Yes, you read it right. It’s ready in 15 minutes. Unless you’re really slow at cooking. But if I can do it in 15 minutes, you can too :)

Ingredients:

  • 1 package frozen veggies (I like the ones with chopped carrots, peas, and corn)
  • 2 Tbsp coconut oil
  • 3 chicken breasts (cubed)
  • Salt and pepper to taste
  • 1 cup quinoa
  • 1 cup water

Directions:

  1. Boil one cup water in a medium saucepan. Once boiled, add in your quinoa and allow to simmer on low for about 10 minutes or until water is absorbed. Once the quinoa is cooked, stir in 1 Tbsp coconut oil.
  2. In a large skillet, use the remaining 1 Tbsp coconut oil to sauté your chicken until it is cooked all the way through. Season chicken with salt and pepper to taste.
  3. Once the chicken is thoroughly cooked, add in frozen veggies and cover. Cook until the veggies are soft but not mushy (usually around 4-5 minutes).
  4. Stir the quinoa into your large skillet with veggies and chicken.
  5. Serve while hot!

 

This is one of our absolute favorite recipes. It’s super healthy, it’s tasty and it makes for great leftovers too! If you even want to skip a step, you can use Tyson Grilled ‘n Ready grilled chicken strips, they just require you to heat them up instead of cooking raw chicken – it saves a little time and it tastes just as good! I may have done this a time or two… :)

Of course, you can add in broccoli, green beans, peppers, and whatever else you like in your stir-fry. Yum! Now I’m hungry. What do you like to add into your stir-fry? I’d love to hear!
